Look at that stack ! We've got a cracker of a pancake recipe for you, and some serious topping inspo... This is your one week warning to gather up all of the ingredients you need for pancake day 2022 (I mean, pancakes are definitely not just for pancake day, but any excuse, eh!)
We're keeping it simple this year... here's Hannah's favourite pancake recipe which is plant-based (of course), gluten and refined sugar free (thumbs-up), and delicious (as always!). They'll provide the perfect fool-proof base to load up with ALL of your favourite toppings.
And you can actually load these baby's up with ALL of the toppings. Remember when you shop SomethingGood you can buy as much or as little as you need. Why not bring a jar down and fill it up with a little bit of everything...? We'll help you pick out all of your faves!
Here's what you'll need to make one generous serving (all available in store, of course!) ...
- 75g of rice flour
- 1 teaspoon baking powder
- 1/2 teaspoon of cinnamon
- 1 tablespoon chia or flax seeds
- A generous pinch of salt
- 2 dates
- 1 tablespoon almond butter or tahini
- 150ml of oat milk
- 1 tablespoon of apple cider vinegar
- A splash of oil for frying
How to make them...
Add all ingredients to a blender and blend until smooth. Add a little more flour if the batter is too runny and a splash more milk if it's too thick.
Spoon a couple of tablespoons of the mixture into a frying pan on a medium heat with a small amount of oil. Cook for 2-3 minutes until bubbles appear, flip and repeat the process on the other side. Your pancakes should be lightly golden on both sides.
Repeat until you have used up all your pancake mix. Load up with an unacceptable amount of toppings (it's pancake day!), and enjoy. Easy!
